Ingredients
  

For the Hot Chocolate
  • 4 cups whole milk
  • 1/2 cup pure pumpkin puree Use 100% pure pumpkin puree, not pumpkin pie filling.
  • 1/3 cup granulated sugar Can be substituted with honey, maple syrup, or agave.
  • 1/4 cup unsweetened cocoa powder Can be replaced with carob powder for a caffeine-free option.
  • 1 tsp pumpkin pie spice Substitute with a mix of ground cinnamon, nutmeg, and cloves if needed.
  • 1/2 tsp vanilla extract Vanilla bean paste can be used for a more intense flavor.
  • 1 pinch salt Enhances flavors, do not skip.
  • Whipped cream, for topping Optional garnish.
  • Extra pumpkin pie spice or cinnamon, for garnish Optional garnish.

Method
 

Preparation
  1. In a medium saucepan, whisk together pumpkin puree, granulated sugar, unsweetened cocoa powder, and pumpkin pie spice until a smooth paste forms.
  2. Slowly whisk in the whole milk, a little at a time at first to prevent lumps until the mixture is smooth.
  3. Place the saucepan over medium heat. Cook the mixture, whisking frequently, for 6 to 8 minutes until it gets steaming hot but does not boil.
  4. Remove the pan from heat and stir in the vanilla extract and a pinch of salt.
  5. Pour the hot chocolate into mugs, top each with a generous swirl of whipped cream, and finally dust with extra pumpkin pie spice or cinnamon.

Notes

Store leftover hot chocolate in the refrigerator for up to 3 days. Can be frozen for up to 1 month but may change texture. Reheat gently on the stovetop or in the microwave.
