Ingredients
  

For the cookies
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup pure pumpkin puree
  • 3/4 cup vegetable oil
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the filling
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, pumpkin pie spice, and salt.
  3. In a separate large bowl, whisk the pumpkin puree, vegetable oil, brown sugar, egg, and vanilla extract until smooth.
  4. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  5. Drop rounded tablespoons of the batter onto the prepared baking sheets, spacing each about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10 to 12 minutes, or until the tops spring back lightly when touched.
  2. Let the cookies cool completely on wire racks.
Filling and Assembling
  1. Beat the softened cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar, beating until light and fluffy.
  3. Spread or pipe about 2 tablespoons of filling onto the flat side of one cookie, then sandwich with another cookie.
  4. Store assembled whoopie pies in an airtight container in the refrigerator.

Notes

These whoopie pies can be made ahead of time and stored in the refrigerator for up to 4 days or frozen for up to 2 months. Thaw overnight in the refrigerator before enjoying.
