  • 1 cup orzo pasta Cooked al dente.
  • 2 cups cherry tomatoes, halved Fresh for best flavor.
  • 1 cup mozzarella pearls Soft and creamy.
  • 1/4 cup fresh basil, chopped Or substitute with parsley or arugula.
Dressing
  • 1/4 cup balsamic vinegar Adjust to taste.
  • 2 tablespoons olive oil Can substitute with avocado oil.
  • to taste Salt and pepper Enhances flavor.

Method
 

Preparation
  1. Cook the orzo pasta according to the package instructions with salted boiling water. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled orzo, halved cherry tomatoes, mozzarella pearls, and chopped fresh basil. Mix gently.
Make the Dressing
  1. In a small bowl, whisk together the balsamic vinegar and olive oil. Taste and adjust as necessary.
Combine and Serve
  1. Pour the dressing over the salad and season with salt and pepper. Toss gently until everything is well-coated.
  2. Serve immediately or chill in the refrigerator for better flavor melding.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This salad is best enjoyed fresh and not recommended for freezing.
