Ingredients

  • 1 lb steak (cubed) Tender cuts like sirloin or ribeye recommended.
  • 2 medium zucchinis (sliced) Fresh and bright green for best flavor.
  • 1/4 cup balsamic vinegar Use for marinade.
  • 2 tablespoons olive oil Can substitute with canola or avocado oil.
  • 2 cloves garlic (minced) Fresh is best, garlic powder can be used in a pinch.
  • Salt and pepper to taste Adjust according to preference.
  • Fresh parsley (for garnish) Can substitute with basil or cilantro.

Method
 

Prepare the Marinade
  1. In a bowl, combine the balsamic vinegar, olive oil, minced garlic, salt, and pepper. Mix well to create a smooth marinade that will infuse flavor into the steak.
Marinate the Steak
  1. Add the cubed steak to your marinade. Ensure all pieces are coated well. Allow the steak to marinate for at least 15 minutes, letting the flavors soak in.
Cook the Steak
  1. Heat a skillet over medium-high heat. Add the marinated steak pieces to the skillet, making sure they are spread out. Cook for about 4-5 minutes or until they develop a nice brown crust and are cooked to your desired doneness.
Add the Zucchini
  1. Once the steak is cooked, add the sliced zucchini to the skillet. Stir gently and cook for another 3-4 minutes until the zucchini is tender but still bright green and crisp.
Garnish and Serve
  1. Remove the skillet from heat. Serve your delicious steak bites and zucchini immediately, garnished with fresh parsley for a pop of color and flavor.

Notes

Store leftovers in the refrigerator for up to 3 days in an airtight container. Cooked steak bites can be frozen for up to 2 months. Reheat in a skillet or microwave.
