  • 8 oz pasta (like penne or rigatoni)
  • 1 lb Italian sausage (sliced) Fresh sausage links recommended.
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 14 oz can diced tomatoes
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian option.
  • 1 tsp Italian seasoning
  • Salt and pepper to taste Adjust according to preference.
  • Olive oil For cooking.
  • Grated Parmesan cheese (for serving) Can substitute with mozzarella or feta.

Method
 

Preparation
  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  2. Incorporate the sliced bell pepper and onion into the pot and cook until softened, about another 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the pasta, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir well to combine all ingredients.
  5. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for 10-12 minutes, or until the pasta is tender.
  6. Once the pasta is cooked, serve it hot with a generous sprinkle of grated Parmesan cheese on top.

Notes

Store in the refrigerator for 3-4 days in an airtight container. Can be frozen for 2-3 months. Reheat on stovetop with a splash of broth or water.
