Ingredients

For greasing and coating
  • 1 tablespoon Unsalted butter or cooking spray, for greasing
  • 2-3 tablespoons Granulated sugar, for coating the pan
Custard ingredients
  • 12 large Egg yolks, at room temperature
  • 2/3 cup Sweetened shredded coconut (about 2 ounces)
  • 3/4 cup Canned coconut milk (about 6.75 fluid ounces)
  • 1 cup Granulated sugar
  • 1 teaspoon Orange liqueur or vanilla extract (optional)
Garnish (optional)
  • to taste Fresh mint or extra grated coconut for topping

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin thoroughly with butter or cooking spray, then coat the bottoms and sides with granulated sugar.
  2. Press the egg yolks through a fine sieve into a large bowl to remove the thin membranes.
  3. Add the coconut milk, shredded coconut, granulated sugar, and the orange liqueur or vanilla extract (if using). Whisk gently until smooth.
Baking
  1. Spoon the mixture into the prepared muffin cups, filling each one about three-quarters full. Set the muffin tin inside a larger roasting pan and pour boiling water into the roasting pan until it reaches halfway up the sides of the muffin cups.
  2. Bake for 25 to 30 minutes, or until the tops are set and a toothpick comes out clean.
Cooling and Serving
  1. Allow the tin to cool on a rack for about 5 minutes. While still warm, place a baking sheet over the tin and flip it over to unmold. If any quindims stick, run a small knife around the edges to release them.
  2. Cool completely and chill for at least 2 hours before serving cold, topped with mint or grated coconut if desired.

Notes

Keep Brazilian quindim in an airtight container in the refrigerator for 3 to 4 days. Freezing is not recommended as it can alter the texture. For a gentle warm-up, let sit at room temperature for 10 to 15 minutes.
