Preparation
- In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another mixing bowl, combine the buttermilk, egg, vegetable oil, red food coloring, and vanilla extract. Mix until everything is well combined.
- Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined. A few lumps are okay.
Cooking
- Heat a non-stick skillet over medium heat and pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface of the pancake, approximately 2-3 minutes. Then flip and cook for another 2 minutes or until golden brown.
Serving
- Serve warm topped with cream cheese frosting, a drizzle of chocolate syrup, and optional chocolate chips.
Notes
Store pancakes in an airtight container for up to 2 days in the refrigerator or freeze for up to 2 months. Reheat on the stovetop or microwave.
