Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons vegetable oil can be substituted with melted butter
  • 1 teaspoon red food coloring can be omitted for chocolate pancakes
  • 1/2 teaspoon vanilla extract
Toppings
  • Cream cheese frosting for topping
  • Chocolate syrup for drizzling
  • Chocolate chips optional, for garnish

Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  2. In another mixing bowl, combine the buttermilk, egg, vegetable oil, red food coloring, and vanilla extract. Mix until everything is well combined.
  3. Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined. A few lumps are okay.
Cooking
  1. Heat a non-stick skillet over medium heat and pour about 1/4 cup of the batter onto the skillet for each pancake.
  2. Cook until bubbles form on the surface of the pancake, approximately 2-3 minutes. Then flip and cook for another 2 minutes or until golden brown.
Serving
  1. Serve warm topped with cream cheese frosting, a drizzle of chocolate syrup, and optional chocolate chips.

Notes

Store pancakes in an airtight container for up to 2 days in the refrigerator or freeze for up to 2 months. Reheat on the stovetop or microwave.
