Ingredients
  

Main Ingredients
  • 8 ounces pasta (such as rotini or penne) Use whole grain or gluten-free options for added health benefits.
  • 1 cup cherry tomatoes, halved Regular diced tomatoes can be used if cherry tomatoes aren't available.
  • 1 cup cucumber, diced Diced bell pepper or zucchini can be substituted.
  • 1/2 cup red onion, finely chopped Green onions or shallots offer a milder flavor.
  • 1/2 cup bell pepper, diced Any color bell pepper works well.
  • 1/4 cup olives, sliced Capers or artichoke hearts can be used as alternatives.
  • 1/4 cup feta cheese, crumbled Goat cheese or a vegan cheese alternative can be used.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste Season to enhance overall flavor.

Method
 

Preparation
  1. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, olives, and feta.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over it. Toss gently to combine.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Serving
  1. Serve chilled and enjoy the refreshing flavors!

Notes

This salad keeps well for up to 3 days in an airtight container. Not recommended for freezing with dressing, but can be frozen without it. Serve with grilled chicken or shrimp for added protein, and pair with bread or a green salad.
