Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
Mixing Ingredients
  1. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir well.
  2. Add the eggs, milk, oil, and vanilla extract to the bowl. Beat for about 2 minutes until well combined.
  3. Stir in the boiling water and brewed coffee until the batter is mixed.
  4. Fold in the chocolate chips carefully to avoid overmixing.
Baking
  1. Pour the batter evenly into the prepared pans and bake for 30-35 minutes.
  2. Check for doneness with a toothpick; it should come out clean or with a few moist crumbs.
Cooling and Frosting
  1. Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  2. Once cooled, frost with your favorite chocolate frosting.

Notes

This cake pairs well with vanilla ice cream or whipped cream. Store in an airtight container in the refrigerator for up to 5 days. You can freeze individual slices wrapped tightly in plastic wrap for up to 3 months.
