Ingredients
  

For the roasted cauliflower
  • 1 head cauliflower Fresh and firm for best results
  • 2 tablespoons olive oil Can substitute with melted coconut oil
  • to taste salt Generously season for best flavor
  • to taste pepper Generously season for best flavor
For the curry spiced aioli
  • 1 cup mayonnaise Can substitute with Greek yogurt or dairy-free mayo
  • 1 tablespoon curry powder Garam masala can be used as an alternative
  • 1 teaspoon garlic powder Can replace with fresh minced garlic
  • 1 tablespoon lemon juice Lime juice can be used instead
  • to taste fresh parsley For garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the cauliflower into small florets of similar size for even cooking.
  3. In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper until evenly coated.
Roasting
  1. Spread the seasoned cauliflower florets on the baking sheet without overcrowding.
  2. Roast in the preheated oven for 25-30 minutes, until golden brown and tender.
Making the Aioli
  1. While the cauliflower roasts, prepare the aioli by whisking together mayonnaise, curry powder, garlic powder, and lemon juice in a bowl until smooth.
Serving
  1. Once the cauliflower is done, drizzle the curry spiced aioli over it and toss gently if desired.
  2. Garnish with fresh parsley and serve immediately.

Notes

Ensure the baking sheet is not overcrowded to achieve the best roasting results. Adjust the seasoning to your taste while cooking.
