  • 1 teaspoon Italian seasoning Mix your own herbs like basil, oregano, and thyme if needed.

Preparation
  1. Preheat your oven to 425°F (220°C). While the oven is heating, wash the delicata squash and slice it into rings about 1/2-inch thick.
  2. In a large bowl, toss the squash rings with olive oil, minced garlic, Italian seasoning, salt, and pepper until well coated.
  3. Spread the seasoned squash rings in a single layer on a baking sheet, ensuring there is enough space between them for roasting.
Cooking
  1. Place the baking sheet in the preheated oven. Roast the squash for 20-25 minutes, flipping halfway through, until tender and golden brown.
  2. In the last five minutes of roasting, sprinkle the grated Parmesan cheese evenly over the squash.
Serving
  1. Once out of the oven, garnish the roasted garlic Parmesan delicata squash with fresh parsley. Serve warm.

Notes

Overcrowding the baking sheet can lead to steaming instead of roasting. For best results, space the squash rings out properly. Watch for overcooking to prevent mushiness.
