Preparation
- Preheat your oven to 425°F (220°C). Wash, peel if desired, and chop your root vegetables into even-sized pieces.
- In a large mixing bowl, combine all the chopped root vegetables. Pour in the olive oil and season generously with salt and pepper.
- Transfer the seasoned vegetables to a large sheet pan, spreading them out into a single layer to avoid overlapping.
Cooking
- Place the sheet pan in the preheated oven and roast the vegetables for 30-35 minutes, stirring halfway through for even cooking.
- While the vegetables are roasting, melt the butter in a small saucepan and add the minced garlic and fresh thyme, stirring until fragrant.
- Once the vegetables are roasted, remove them from the oven and drizzle the garlic-herb butter over them, gently tossing to coat.
- Finish by garnishing with freshly chopped parsley before serving.
Notes
This dish pairs well with roast chicken, vegetarian stuffed mushrooms, or hearty lentil soup. Store leftovers in an airtight container for up to 3 days.
