Ingredients
  

Root Vegetables
  • 2 pieces carrots (chopped) Look for vibrant, firm carrots.
  • 2 pieces parsnips (chopped) Can substitute with sweet potatoes.
  • 1 piece turnip (chopped) Can be replaced with rutabaga.
  • 2 pieces beets (chopped) Canned beets may be used to save time.
Seasoning and Cooking
  • 3 tablespoons olive oil Can substitute with avocado oil.
  • 3 tablespoons butter (melted) For a dairy-free option, use vegan butter.
  • 2 cloves garlic (minced) Add just after roasting for best flavor.
  • 1 tablespoon fresh thyme Dried thyme may be used if fresh isn't available.
  • salt and pepper To taste.
  • fresh parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Wash, peel if desired, and chop your root vegetables into even-sized pieces.
  2. In a large mixing bowl, combine all the chopped root vegetables. Pour in the olive oil and season generously with salt and pepper.
  3. Transfer the seasoned vegetables to a large sheet pan, spreading them out into a single layer to avoid overlapping.
Cooking
  1. Place the sheet pan in the preheated oven and roast the vegetables for 30-35 minutes, stirring halfway through for even cooking.
  2. While the vegetables are roasting, melt the butter in a small saucepan and add the minced garlic and fresh thyme, stirring until fragrant.
  3. Once the vegetables are roasted, remove them from the oven and drizzle the garlic-herb butter over them, gently tossing to coat.
  4. Finish by garnishing with freshly chopped parsley before serving.

Notes

This dish pairs well with roast chicken, vegetarian stuffed mushrooms, or hearty lentil soup. Store leftovers in an airtight container for up to 3 days.
