Preparation
- Preheat your oven to 400°F (200°C). Cut the acorn squashes in half, remove the seeds, and drizzle the cut sides with olive oil. Season with salt and pepper.
Roasting
- Place the acorn squashes cut-side down on a baking sheet and roast for 25-30 minutes until tender.
Cooking the Filling
- Heat olive oil in a skillet over medium heat. Sauté the diced onion and minced garlic until the onion is translucent.
- Add the ground turkey to the skillet, seasoning with dried thyme, oregano, salt, and pepper. Cook until the turkey is browned and fully cooked, about 5-7 minutes.
- Stir in the cooked quinoa until well mixed and heated through.
Stuffing
- Flip the roasted acorn squashes over carefully and fill each half with the turkey and quinoa mixture. If using, sprinkle mozzarella cheese on top.
Final Bake
- Return the stuffed acorn squashes to the oven and bake for an additional 10-15 minutes to meld flavors and melt the cheese.
Serving
- Remove from the oven and let them sit for a moment before serving warm.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Can be frozen for up to 3 months. Reheat on low heat in a pan or in the microwave on medium power.
