Ingredients

Main Ingredients
  • 2 large egg whites, at room temperature Use fresh, room temperature egg whites for best results.
  • 1 cup granulated sugar
  • 1 cup light brown sugar, tightly packed
  • 1/2 cup water
  • 2 tbsp light corn syrup Can substitute with golden syrup.
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract Can be replaced with almond extract.
  • 1/2 heaping cup chopped pecans or walnuts, toasted (optional) Use according to preference.
  • Butter for greasing the spoons

Method

Preparation
  1. Line two baking sheets with parchment or wax paper. Place the egg whites in a clean, grease-free mixer bowl. If using nuts, toast them at 350°F for about 5 minutes, then cool and chop.
Cooking Sugar Syrup
  1. In a saucepan, combine granulated sugar, brown sugar, light corn syrup, and water. Cook over medium-low heat, stirring until the sugar dissolves. Wipe the sides of the pan with a damp pastry brush.
Boiling
  1. Once the syrup begins to boil, stop stirring and clip on a candy thermometer. Cook until the syrup reaches 255°F (hard-ball stage).
Whipping Egg Whites
  1. When the syrup reaches about 240°F, add salt to the egg whites and whip on high until stiff peaks form.
Combining
  1. When the syrup reaches 255°F, remove from heat. Slowly drizzle the hot syrup into the whipped egg whites while the mixer runs on high.
Beating Mixture
  1. Beat the mixture until thick and glossy, strong enough to hold its shape.
Finishing
  1. Fold in the vanilla extract and nuts (if using). Work quickly as the mixture begins to set.
Scooping and Drying
  1. Using buttered spoons, drop about 1 1/2 tablespoon portions onto lined trays. Let dry uncovered for 3 hours or overnight until firm.

Notes

Store in an airtight container for up to 2 weeks. For humid areas, check often and use wax paper between layers to prevent sticking. Can be frozen for up to 2 months.
