Main Ingredients
  • 1 lb sea scallops Fresh scallops should have a slight sheen.
  • 2 cans white beans Drained and rinsed.
  • 3 cups fresh spinach Can be substituted with kale for a heartier option.
  • 2 pieces lemons Halved for charring.
  • 2 tbsp olive oil Can substitute with avocado oil.
  • 2 cloves garlic Minced.
  • to taste fresh parsley For garnish.
  • to taste black pepper For seasoning.

Method
 

Preparation
  1. Pat the sea scallops dry with paper towels and season with black pepper on both sides.
Cooking
  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the scallops and sear them for about 2 minutes on each side until golden brown. Remove the scallops from the pan and set aside.
  2. In the same skillet, add the halved lemons cut-side down and char them for 2-3 minutes until grill marks appear.
  3. Use the remaining tablespoon of oil in the skillet to sauté the minced garlic for about one minute. Then add the white beans and fresh spinach, cooking until the spinach wilts and everything is heated through.
  4. To serve, place the white bean and spinach mixture onto plates, top with the seared scallops, and drizzle some of the charred lemon juice over them.
Garnishing
  1. Finish with a sprinkle of fresh parsley for garnish.

Notes

Ensure scallops are dry before cooking for the best sear. Serve with a light salad or roasted asparagus for a complete meal.
