  • 2 cups bell peppers, chopped Use any color you prefer.
  • 1 cup onion, sliced Red onions can be used for a milder taste.
  • 2 cups zucchini, sliced Can substitute with yellow squash.
Seasonings and Oil
  • 2 tablespoons olive oil Avocado oil can be used for a higher smoke point.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning Fresh herbs can be used instead for a brighter flavor.
  • Salt and pepper to taste Adjust according to preference.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the beef sausage, chopped bell peppers, sliced onion, and zucchini.
  3. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
  4. Toss all the ingredients until evenly coated.
  5. Spread the mixture on a sheet pan in a single layer.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until vegetables are fork-tender and sausage is cooked through.
Serving
  1. Once baked, remove from the oven and let cool for a minute. Serve hot.

Notes
