Preparation
- Preheat your oven to 400°F (200°C) and prepare your baking dish by lightly greasing it with cooking spray or olive oil.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and diced carrots, cooking until softened and fragrant, about 5-7 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks for about 8-10 minutes.
- Stir in the tomato paste, Worcestershire sauce, and green peas. Season with salt and pepper to taste.
- Spread the beef mixture evenly in the prepared baking dish.
- Spread the mashed potatoes over the beef mixture evenly. Sprinkle shredded cheddar cheese on top if using.
Baking
- Place the baking dish in the preheated oven and bake for 25-30 minutes until the top is golden brown and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
This dish stores well in the fridge for up to 3-4 days and can be frozen for up to 3 months. For reheating, use a microwave or an oven set to 350°F (175°C) for about 20-25 minutes.
