  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 cups green peas, fresh or frozen
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 4 cups mashed potatoes Homemade or store-bought.
  • 1 cup shredded cheddar cheese (optional) For a gooey topping.
  • 2 tablespoons olive oil For sautéing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare your baking dish by lightly greasing it with cooking spray or olive oil.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and diced carrots, cooking until softened and fragrant, about 5-7 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks for about 8-10 minutes.
  4. Stir in the tomato paste, Worcestershire sauce, and green peas. Season with salt and pepper to taste.
  5. Spread the beef mixture evenly in the prepared baking dish.
  6. Spread the mashed potatoes over the beef mixture evenly. Sprinkle shredded cheddar cheese on top if using.
Baking
  1. Place the baking dish in the preheated oven and bake for 25-30 minutes until the top is golden brown and bubbly.
  2. Remove from the oven and let cool for a few minutes before serving.

Notes

This dish stores well in the fridge for up to 3-4 days and can be frozen for up to 3 months. For reheating, use a microwave or an oven set to 350°F (175°C) for about 20-25 minutes.
