Method
 

Preparation
  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the chicken breasts generously with salt, pepper, and cinnamon.
  3. Carefully place the seasoned chicken in the hot skillet and sear until golden brown, about 5-6 minutes per side.
Cooking
  1. Remove chicken from the skillet and set aside.
  2. In the same skillet, reduce heat to medium and add apple cider and Dijon mustard, stirring to combine.
  3. Return the chicken to the skillet and reduce heat to low, simmering in the glaze until cooked through, about 7-10 minutes.
Serving
  1. Remove the chicken, spoon the thickened glaze over it, and garnish with fresh thyme before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Freeze for up to 3 months. Reheat on low heat.
