Preparation
- Begin by heating a couple of tablespoons of olive oil in a large skillet over medium heat.
- Once the oil is shimmering, add the diced sweet potatoes to the skillet. Cook them for about 10 minutes, stirring occasionally until they start to soften and are lightly browned.
- Next, introduce the sliced turkey sausage, diced bell pepper, diced onion, and minced garlic. Stir everything together and let it cook for a few minutes.
- Sprinkle in the paprika, along with salt and pepper to taste. Mix well to ensure that the seasoning is evenly distributed throughout the dish.
- Continue cooking for another 10-15 minutes, stirring occasionally, until the sweet potatoes are completely tender and the sausage has a nice golden color.
- Once cooked, remove the skillet from the heat. Garnish the hash with freshly chopped parsley before serving.
Notes
For serving, consider adding a side of fresh fruit, Greek yogurt, or whole-grain toast. You can also pair it with poached or fried eggs for added richness.
