  • 1 cup balsamic vinegar
  • 1/4 cup soy sauce Can substitute with tamari for gluten-free.
  • 1/4 cup brown sugar Honey can be used as a substitute.
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme Alternatively, use rosemary for a stronger flavor.
  • 1 tablespoon olive oil For searing the roast.
  • 1 onion sliced Layered in the slow cooker.
  • 2 cups beef broth Chicken broth can be substituted for a lighter taste.
  • Salt and pepper to taste Adjust according to personal preference.

Preparation
  1. In a bowl, mix together the balsamic vinegar, soy sauce, brown sugar, minced garlic, thyme, salt, and pepper until well combined.
  2. Heat olive oil in a skillet over medium-high heat and sear the chuck roast on all sides until golden-brown.
  3. Layer sliced onion in the slow cooker.
  4. Place the seared chuck roast on top of the sliced onions.
  5. Pour the balsamic mixture over the roast, ensuring it coats the meat.
  6. Gently pour the beef broth around the roast.
  7. Cover the slow cooker and set it to low for 6-8 hours.
  8. Once cooked, remove the roast, slice, and serve with the sauce.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Warm up slowly, adding broth if needed.
