- In a bowl, mix together the balsamic vinegar, soy sauce, brown sugar, minced garlic, thyme, salt, and pepper until well combined.
- Heat olive oil in a skillet over medium-high heat and sear the chuck roast on all sides until golden-brown.
- Layer sliced onion in the slow cooker.
- Place the seared chuck roast on top of the sliced onions.
- Pour the balsamic mixture over the roast, ensuring it coats the meat.
- Gently pour the beef broth around the roast.
- Cover the slow cooker and set it to low for 6-8 hours.
- Once cooked, remove the roast, slice, and serve with the sauce.
Notes
Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Warm up slowly, adding broth if needed.
