  • 1 tsp smoked paprika Adds a smoky taste.
  • 1 tsp fine sea salt Plus more to taste.
  • 1/2 tsp freshly ground black pepper
  • 3 pieces bay leaves Remove before serving.
  • 1/2 cup low-sodium beef broth For moist cooking.
For Serving
  • 16 small corn tortillas, warmed Can substitute with flour tortillas if preferred.
  • 1 cup diced white onion Can substitute with red onion for color and flavor.
  • 1/2 cup fresh cilantro, chopped Adds freshness.
  • 1 piece lime, cut into wedges For serving.
  • to taste salsa or hot sauce Optional for topping.

Method

Preparation
  1. Blend the Barbacoa Sauce: Add lime juice, apple cider vinegar, garlic, chipotle peppers with adobo sauce, cumin, oregano, smoked paprika, salt, and pepper to a blender. Blend until smooth.
  2. Add Beef to the Slow Cooker: Pat the beef chunks dry with paper towels. Place them in a slow cooker and pour the blended sauce over the beef, tossing to coat. Add bay leaves and beef broth.
Cooking
  1. Cover and cook on low for 8 to 9 hours or on high for 5 to 6 hours until the beef is tender and shreds easily.
  2. Remove and discard bay leaves. Shred the beef directly in the slow cooker and mix with cooking liquid.
  3. Let it sit on warm for 10-15 minutes to absorb flavor.
  4. Taste and adjust seasoning if necessary. If the mixture is too liquidy, serve with a slotted spoon or reduce the sauce.
Serving
  1. Warm tortillas in a skillet or microwave. Fill each tortilla with beef, top with onion, cilantro, and lime juice, and serve with lime wedges and salsa.

Notes

Great for leftovers - the beef stays moist and tasty for days. Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
