Preparation
- Place the chicken breasts into a 6-quart slow cooker. Add the fire-roasted diced tomatoes, minced chipotle peppers, adobo sauce, diced onion, minced garlic, cumin, oregano, and kosher salt. Stir gently to combine.
Cooking
- Cover the slow cooker and cook on low for 6 hours or high for 3 hours, until the chicken is very tender.
Shredding
- Remove the cooked chicken breasts and shred them into bite-sized pieces using two forks. Return the shredded chicken to the slow cooker and stir into the sauce.
Tortilla Preparation
- Heat the corn tortillas in a dry skillet for about 30 seconds per side, or wrap in a damp paper towel and microwave for 30 seconds.
Assembly
- Fill each tortilla with a generous scoop of chicken tinga. Top with crumbled queso fresco, diced onion, and fresh cilantro.
