  • 2 cloves garlic, minced
  • 1 cup celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Method
 

Preparation
  1. Start by arranging the chicken thighs at the bottom of your slow cooker.
  2. Layer the carrots, potatoes, onion, garlic, and celery around the chicken.
  3. Gently pour the chicken broth over the chicken and vegetables.
  4. Sprinkle the thyme, rosemary, salt, and pepper over the contents in the slow cooker.
  5. Cover the slow cooker with its lid and set it to cook on low for 6-8 hours or high for around 4 hours.
  6. Once cooked, shred the chicken using two forks and mix it back into the stew.

Notes

This stew is perfect for chilly nights and is great for potlucks. Store leftovers in an airtight container for up to 4 days in the refrigerator and freeze for up to 3 months.
