  • 1 cup orange juice Can substitute with pineapple juice for a sweeter flavor.
  • 4 cloves garlic Chopped or whole can be used.
  • 1 whole onion Quartered.
  • 2 tbsp cumin For flavor seasoning.
  • 1 tbsp oregano Adds aroma and flavor.
  • 2 cups cooked rice Can substitute with cauliflower rice for a low-carb option.
Toppings
  • 1 can black beans Can be replaced with pinto beans or chickpeas.
  • 1 cup corn Adds sweetness and crunch.
  • 1 medium avocado Or substitute with jalapeño slices for crunch.
  • 1 bunch cilantro Can substitute with parsley if disliked.
  • 2 pieces lime wedges Used for serving; adds freshness.

Method
 

Preparation
  1. Season the pork shoulder with cumin, oregano, salt, and pepper. Rub the spices thoroughly into the meat.
  2. Place the seasoned pork shoulder in the slow cooker and add the orange juice, garlic cloves, and quartered onion.
Cooking
  1. Cover the slow cooker and set it to cook on low for 8 to 9 hours.
  2. Once the cooking time is complete, carefully remove the pork shoulder from the slow cooker and shred the meat using two forks.
Finishing Touches
  1. Transfer the shredded pork onto a baking sheet and broil it in the oven for about five minutes to achieve crispy edges.
  2. Assemble your taco bowls by placing cooked rice at the base, followed by black beans, corn, and shredded pork. Top with avocado slices and fresh cilantro, serving with lime wedges.

Notes

Refrigerate leftover components for up to 3 days or freeze the cooked pork for up to 3 months. Reheat gently before serving. Don’t overcook the pork to avoid dryness, and season generously.
