Cooking
- Cover the slow cooker and set it to cook on low for 8 to 9 hours.
- Once the cooking time is complete, carefully remove the pork shoulder from the slow cooker and shred the meat using two forks.
Finishing Touches
- Transfer the shredded pork onto a baking sheet and broil it in the oven for about five minutes to achieve crispy edges.
- Assemble your taco bowls by placing cooked rice at the base, followed by black beans, corn, and shredded pork. Top with avocado slices and fresh cilantro, serving with lime wedges.
Notes
Refrigerate leftover components for up to 3 days or freeze the cooked pork for up to 3 months. Reheat gently before serving. Don’t overcook the pork to avoid dryness, and season generously.
