Salad Base
  • 4 oz smoked salmon, sliced
  • 1 large cucumber, thinly sliced
  • 1/4 unit red onion, thinly sliced
  • 1 tbsp fresh dill, chopped
Dressing
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, start by combining the thinly sliced cucumber, red onion, and chopped fresh dill.
  2. Gently add the sliced smoked salmon to the bowl, being careful not to break it apart too much.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  4. Drizzle the prepared dressing over the salad mixture and toss gently.
  5. Serve immediately or chill in the fridge for about 15 minutes.

Notes

This salad pairs beautifully with garlic bread or creamy potato salad. For storage, keep in an airtight container in the refrigerator for up to 2 days, but do not freeze.
