  • 2 pieces ripe avocados
  • 1 cup roasted corn Canned corn can be used.
  • 1 cup canned black beans, rinsed and drained
  • 1 small red onion, finely chopped
  • 1 clove garlic, minced
  • 1 piece lime, juiced
  • Salt and pepper to taste
  • Cilantro for garnish

Method
 

Preparation
  1. Cut the avocados in half lengthwise and remove the pit. Using a spoon, scoop the flesh into a bowl.
  2. With a fork, mash the avocado to your desired consistency. You can make it smooth, or leave some chunks for texture.
  3. Add the roasted corn, black beans, finely chopped red onion, minced garlic, and freshly squeezed lime juice to the mashed avocado.
  4. Gently mix the ingredients together. Taste your guacamole to see if it needs any additional salt or pepper.
  5. Once you are satisfied with the taste, garnish with fresh cilantro.
  6. Serve immediately with tortilla chips or as a topping for your favorite dishes.

Notes

Selecting ripe avocados is key; they should yield gently to pressure. Store leftover guacamole in an airtight container for up to 2 days, pressing plastic wrap against the surface to prevent browning. Freeze for later use but note potential texture changes.
