- Cut the avocados in half lengthwise and remove the pit. Using a spoon, scoop the flesh into a bowl.
- With a fork, mash the avocado to your desired consistency. You can make it smooth, or leave some chunks for texture.
- Add the roasted corn, black beans, finely chopped red onion, minced garlic, and freshly squeezed lime juice to the mashed avocado.
- Gently mix the ingredients together. Taste your guacamole to see if it needs any additional salt or pepper.
- Once you are satisfied with the taste, garnish with fresh cilantro.
- Serve immediately with tortilla chips or as a topping for your favorite dishes.
Notes
Selecting ripe avocados is key; they should yield gently to pressure. Store leftover guacamole in an airtight container for up to 2 days, pressing plastic wrap against the surface to prevent browning. Freeze for later use but note potential texture changes.
