Method
Preparation
- Start by combining the seasoning ingredients in a small bowl and set them aside.
- Whisk the cornstarch into the chicken broth and beef broth until smooth.
- Whisk in the bouillon, onion powder, garlic powder, and Worcestershire sauce, then set this mixture aside.
Pound and Season the Steaks
- Cover each cube steak with plastic wrap, then pound it to about 1/2 inch thick with the rough side of a meat tenderizer.
- Pat the steaks dry with paper towels.
- Rub both sides with the seasoning mix, and coat them lightly with flour.
- Tap off any extra flour.
Sear the Steaks
- Heat the olive oil in a large skillet over medium-high heat.
- Sear 2 steaks at a time for about 3 minutes per side.
- Move the browned steaks to a plate and let them rest.
Cook the Onions and Build the Gravy
- Melt 2 tablespoons butter over medium heat and scrape the bottom of the pan.
- Add the sliced onions and cook for 15 to 25 minutes, stirring often, until they are very soft and nearly caramelized.
- Pour in the broth mixture and scrape up any browned bits from the pan.
- Bring it to a boil, then reduce the heat to a simmer.
Finish the Dish
- Return the steaks and any juices to the pan.
- Spoon gravy over the top and simmer partially covered for about 5 minutes, or until the gravy thickens and the meat is done.
- Aim for an internal temperature of about 125°F.
- Stir in the remaining 2 tablespoons cold butter off the heat if desired.
- Serve warm with mashed potatoes, biscuits, and roasted carrots or green beans.
Notes
For best results, pat the steaks dry before seasoning. Ensure the gravy mixture is smooth before adding to the pan. This dish is recommended for chilly nights, family dinners, or potlucks.
