  • 1 cup rolled oats Choose large cut or whole grain for best texture.
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup brown sugar Can substitute with coconut sugar.
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon Add a pinch of nutmeg for extra spice.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Can use coconut oil for a dairy-free version.
  • 1 large egg Replace with a flax egg for a vegan version.
  • 1 teaspoon vanilla extract
Mix-ins
  • 1 cup raisins Can substitute with chocolate chips or chopped nuts.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In another bowl, combine the rolled oats, all-purpose flour, ground cinnamon, baking soda, and salt. Stir until blended.
  5. Gradually add the dry mixture into the wet mixture, stirring just until combined to avoid overmixing.
  6. Gently fold in the raisins.
Baking
  1. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are golden brown.
  3. Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week. For longer storage, freeze for up to three months. Reheat in the oven at 350°F for 5-7 minutes or microwave for 10-15 seconds.
