Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth and creamy.
- Beat in the egg and vanilla extract until fully incorporated.
- In another bowl, combine the rolled oats, all-purpose flour, ground cinnamon, baking soda, and salt. Stir until blended.
- Gradually add the dry mixture into the wet mixture, stirring just until combined to avoid overmixing.
- Gently fold in the raisins.
Baking
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to one week. For longer storage, freeze for up to three months. Reheat in the oven at 350°F for 5-7 minutes or microwave for 10-15 seconds.
