For the Chancaca Syrup
  • 1 square chancaca (also called panela or piloncillo)
  • 2 cups water
  • 2 small strips lemon or orange peel Can mix both for a brighter flavor.
  • 1 stick cinnamon
  • 3 whole cloves
  • 2 tablespoons cornstarch dissolved in 1/4 cup cold water Optional, for a thicker syrup.

Method

Preparation
  1. Place the flour, baking powder, and salt in a food processor. Pulse to combine.
  2. Add the pumpkin puree and melted fat; pulse until the dough is smooth and pliable.
  3. Knead briefly by hand, then cover and let rest for 20 minutes.
Make the Chancaca Syrup
  1. Simmer water, chancaca, citrus peel, cinnamon stick, and cloves in a saucepan over medium heat until the chancaca dissolves.
  2. Boil gently for about 15 minutes to blend flavors. If thicker syrup is desired, add cornstarch mixture and cook until thickened.

  2. Prick each piece several times with a fork and cut into rounds.
Fry the Sopaipillas

  2. Drain on paper towels.
Soak and Serve
  1. Submerge fried sopaipillas in warm chancaca syrup and let soak before serving.
  2. Serve warm for best flavor.
