  • 2 tablespoons all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1 1/4 cups milk Use cold buttermilk for a richer flavor.
  • 1 tablespoon butter Optional: replace with margarine if needed.
  • 1 teaspoon vanilla extract Optional for added sweetness.
  • 1 pinch salt Optional for added depth.
For the biscuits
  • 3 cups biscuit and baking mix A trusted brand like Pioneer works well.
  • 1 cup milk Cold buttermilk gives a richer flavor.
  • all-purpose flour For dusting and kneading.
  • cooking spray or melted butter For the tops and the baking sheet.

Method

Preparation
  1. Preheat the oven to 450°F and grease a baking sheet.
  2. Stir the biscuit and baking mix with 1 cup milk just until a dough forms, being careful not to overmix.
  3. Turn the dough onto a lightly floured surface and knead gently only 3 to 4 times, then pat or roll to about 1/2 inch thick.
  4. Cut the dough straight down with a biscuit cutter. Place onto the greased baking sheet and lightly spray or brush tops.
Baking the Biscuits
  1. Bake for 10 to 12 minutes, until puffed and golden.
Preparing the Chocolate Gravy
  1. In a heavy saucepan, combine sugar, flour, cocoa powder, and milk. Heat over medium heat until boiling, stirring constantly to prevent scorching.
  2. Once boiling, reduce heat and stir for about 1 more minute until thickened. Stir in the butter (and vanilla and salt if using) after removing from heat.
Serving
  1. Split or tear the warm biscuits into bowls, pour the chocolate gravy over the top, and serve immediately.
