Ingredients

For the greens
  • 5 lb fresh collard greens, stems removed, leaves washed well and chopped Approximately 3 large bunches
  • 1.5 tbsp vegetable oil
  • 2 medium white onions, diced
  • 6 cloves garlic, minced
  • 1 lb smoked turkey wing About 1 smoked turkey wing
  • 2 cups low-sodium chicken stock Plus water as needed
  • 1 tsp crushed red pepper flakes
  • Fine sea salt and freshly ground black pepper, to taste
  • 1/4 cup apple cider vinegar To serve at the table

Method

Preparation
  1. Wash and slice the collard greens. Fill a sink with cold water and swish the collard leaves to loosen grit. Lift them out without pouring out water, repeat, and then cut away thick stems. Roll leaves and slice into 1-inch ribbons.
  2. Soften the onions and garlic. Heat oil in a large pot over medium heat, add onions and cook for 5-6 minutes. Add garlic and cook for 1 minute, stirring often.
  3. Build the smoky base. Add the smoked turkey wing and chicken stock to the pot, bring to a gentle simmer for developing flavor.
  4. Add the greens and season. Stir in collard greens in batches, season with red pepper flakes, salt, and black pepper as greens wilt.
  5. Simmer until tender. Lower heat to medium-low, cover, and cook for about 45 minutes, stirring occasionally. Add water if the pot looks dry.
  6. Finish and serve. Remove turkey wing, shred the meat, and stir into greens. Adjust salt to taste and serve hot with apple cider vinegar on the side.

Notes

Washing collard greens properly prevents grit. Avoid burning garlic and rushing the simmer for best results. Taste and adjust seasoning carefully.
