Southern-Style Shrimp and Sausage Boil

Ingredients
  

For the broth
  • 1 gallon water
  • 0.5 cup Old Bay seasoning, plus more to taste
  • 2 pieces lemons, halved
Main ingredients
  • 1.5 lbs small red potatoes
  • 4 ears corn, husked and halved
  • 1 lb smoked andouille sausage, cut into 2-inch pieces
  • 2 lbs large shrimp, shell-on, deveined
  • 0.5 cup unsalted butter, melted, for serving
  • 2 tbsp fresh parsley, chopped, for garnish
  • Extra pieces lemon wedges, for serving

Method
 

Preparation
  1. Fill a large stockpot with 1 gallon of water. Add the Old Bay seasoning and squeeze in the lemon halves. Drop the lemon halves into the pot too, as they add extra flavor. Bring this mixture to a rolling boil over high heat.
  2. Once boiling, add the red potatoes to the pot and boil for 10 minutes.
  3. Next, add the halved corn and sliced smoked andouille sausage to the pot. Continue boiling everything together for another 8 minutes, until the potatoes are fork-tender.
  4. Now it’s time to add the shrimp. Place them into the pot and cook for just 3 to 4 minutes.
  5. Using a large colander, drain the pot carefully, reserving some broth if you wish.
  6. Pour the boil out onto a newspaper-lined table or into a large serving platter for a fun presentation.
  7. Sprinkle everything with extra Old Bay seasoning to taste and fresh parsley for that touch of color and flavor. Serve immediately with melted butter and lemon wedges for dipping.

Notes

Store leftovers in an airtight container for up to 2 days. This dish can also be frozen for up to 3 months. Reheat carefully to avoid overcooking the shrimp.
