  1. Start by placing the mixed berries in a blender or food processor. Add the sugar and the juice of one lemon. Blend until the mixture is completely smooth. This step is vital for a silky texture in your sorbet.
  2. Once blended, pour the mixture through a fine mesh sieve into a bowl to remove any seeds. Use a spatula to press the mixture through, ensuring you get all the flavorful juice while leaving the seeds behind.
  3. Gently stir the sparkling wine into the berry mixture. It’s important to do this slowly; you want to maintain the effervescence of the sparkling wine for that refreshing finish.
  4. Pour the berry-wine mixture into a shallow dish and place it in the freezer for about one hour. This will help it begin to solidify before you start scraping.
  5. After one hour, take the dish out of the freezer and use a fork to scrape the mixture thoroughly, breaking up any ice crystals. Return it to the freezer and repeat this every 30 minutes for a total of three hours. This technique ensures a light and fluffy texture.
  6. Once your sorbet is ready, scoop it into small glasses. Garnish each serving with a sprig of fresh mint and enjoy this refreshing palate cleanser between your courses!

Notes

Store in the refrigerator for up to a day; best kept in the freezer for three months. Allow to soften for a few minutes before serving.
