Preparation
- In a medium saucepan, combine the chopped pears, water, sugar, sliced ginger, cinnamon stick, and nutmeg. Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer for 12 to 15 minutes until the pears are very soft.
- Take the saucepan off the heat and let the mixture cool for about 10 minutes. Discard the cinnamon stick.
- Transfer the pear mixture to a blender and puree it until completely smooth.
- Strain the puree through a fine-mesh strainer into a bowl and stir in the lemon juice. Chill the syrup in the refrigerator for about 1 hour.
Serving
- Fill 4 glasses with ice cubes. Divide the chilled pear-ginger syrup evenly among the glasses, about 1/4 cup per glass.
- Top each glass with 1/2 cup of chilled ginger beer or ginger ale, pouring slowly down the side to preserve the fizz.
- Gently stir each drink, garnish with pear slices and rosemary if desired, and serve immediately.
Notes
The syrup can be made ahead and stored in the refrigerator for up to 1 week. A great drink for fall and winter gatherings.
