Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or cooking spray. Line the pan with parchment paper, leaving an overhang on the long sides.
Mix Wet Ingredients
- In a large bowl, whisk together the pumpkin puree, mashed bananas, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and well combined.
Combine Dry Ingredients and Fold
- In another bowl, whisk together the all-purpose flour, pumpkin pie spice, baking soda, and kosher salt. Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix. If desired, fold in the chopped walnuts.
Bake the Bread
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, checking for doneness at about 55 minutes with a toothpick. The toothpick should come out clean or with a few moist crumbs.
Cool and Remove from Pan
- Once baked, let the bread cool in the pan for about 15 minutes. Use the parchment overhang to lift the loaf out and place it on a wire rack to cool completely before slicing.
Notes
For serving, pair with honey or cream cheese, and consider enjoying with tea or coffee. Store tightly wrapped at room temperature for up to 4 days, or freeze for up to 3 months.
