  • 2 tbsp coffee liqueur (optional) Can be substituted with extra coffee
  • 2 tbsp unsweetened cocoa powder, for dusting Dust before serving
  • 1/4 tsp ground cinnamon, for dusting Dust before serving

Method

Preparation
  1. In a shallow dish, combine the cooled coffee and coffee liqueur if using. Set aside.
  2. In a large bowl, use a hand mixer to beat the mascarpone, pumpkin puree, granulated sugar, pumpkin pie spice, and vanilla until smooth, about 2 minutes.
  3. In a separate bowl, beat the heavy cream and powdered sugar on medium-high speed until stiff peaks form, about 3 to 4 minutes.
  4. Gently fold the whipped cream into the pumpkin mascarpone mixture in three additions.
Assembly
  1. Quickly dip each ladyfinger into the coffee mixture for about 1 second per side and arrange in a single layer in a 9-inch square baking dish.
  2. Spread half of the pumpkin mascarpone mixture over the ladyfingers.
  3. Repeat with a second layer of dipped ladyfingers and the remaining filling, smoothing the top.
Chill
  1. Cover the dessert and refrigerate for at least 4 hours, preferably overnight.
Serve
  1. Dust generously with cocoa powder and a light touch of cinnamon just before serving. Slice into squares and serve chilled.
  2. Store any leftovers covered in the refrigerator for up to 3 days.

Notes

This dessert pairs well with coffee, tea, or light sides. Avoid soaking ladyfingers for too long, and let the coffee fully cool before assembling.
