  • 1 cup pecans Chopped or whole, based on preference.
Coating
  • 1/3 cup honey Adjust sweetness to taste.
  • 1 tbsp olive oil Can substitute with coconut or avocado oil.
  • 1 tsp ground cinnamon For warmth and flavor.
  • 1/2 tsp smoked paprika Adds a subtle smoky kick.
  • 1/2 tsp kosher salt Enhances the overall flavors.
Add-ins
  • 1/2 cup dried cranberries Can be replaced with other dried fruits.
  • 1/2 cup dark chocolate chips Use vegan chocolate for a dairy-free option.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almonds, cashews, and pecans.
  3. Add the honey, olive oil, ground cinnamon, smoked paprika, and kosher salt, and stir well to coat the nuts evenly.
Baking
  1. Spread the coated nuts in a single layer on the prepared baking sheet.
  2. Bake for 18 to 20 minutes, stirring every 6 minutes to ensure even roasting.
  3. Once fragrant and golden, remove from the oven and allow to cool completely on the baking sheet.
Finishing
  1. In a large bowl, toss the cooled nuts with dried cranberries and dark chocolate chips.
  2. Store in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
