- In a large bowl, mash the black beans and the cooked sweet potato together until mostly smooth.
- Add the breadcrumbs, diced onion, minced garlic, cumin, chili powder, salt, and pepper to the bowl. Mix thoroughly until everything is evenly distributed.
- Take a scoop of the mixture and form it into patties about 1/2 inch thick, ensuring they are compact.
Cooking
- Place a skillet over medium heat and add the olive oil. Allow it to heat up.
- Carefully place the patties in the heated skillet. Cook each side for about 4-5 minutes, or until they are golden brown and crispy.
Serving
- Once cooked, serve the patties warm on a bun with your favorite toppings or over a fresh salad.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freeze for up to 3 months. Reheat in a skillet over medium heat for 3-4 minutes on each side, or microwave for 1-2 minutes until heated through.
