- Heat the skillet over medium heat and add a small drizzle of cooking oil.
- Place one tortilla in the heated skillet. On one half of the tortilla, sprinkle a generous amount of cheese.
- Using the colorful bell peppers, cut them into small shapes for eyes, noses, and mouths, and arrange on top of the cheese.
- Fold the tortilla in half, covering the cheese and decorations. Cook for about 3-4 minutes on each side until golden brown.
- Remove the quesadilla from the skillet and allow it to cool slightly.
- Slice the quesadilla into wedges and serve with dollops of sour cream and garnished with black olives.
Notes
Store leftovers in an airtight container for up to 3 days. Freeze cooked quesadillas for up to 2 months. Reheat in a skillet over medium heat or in the microwave.
