Wet Ingredients
  • 1/2 cup unsalted butter, softened Should be at room temperature.
  • 3/4 cup brown sugar Adds richness to the cookies.
  • 1/2 cup molasses Can substitute with honey or agave.
  • 1 large egg Bind ingredients together.
Decoration

Method
 

Preparation
  1. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Add the molasses and egg to the butter and sugar mixture; mix until combined.
  4. Gradually combine the dry ingredients with the wet mixture, stirring gently to form a dough.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for at least one hour.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. On a floured surface, roll out the chilled dough to about 1/4 inch thick.
  3. Cut out skeleton shapes with cookie cutters and place on a baking sheet lined with parchment paper.
  4. Bake in the oven for 8-10 minutes, or until the edges are firm.
  5. Let the cookies cool completely on a wire rack before decorating.
Decoration
  1. Decorate the cooled cookies with royal icing and add candy eyes as desired.

Notes

These cookies can be stored in an airtight container at room temperature for up to 1 week. Roll cookie shapes and freeze for up to 3 months. Reheat in a preheated oven for 5 minutes or microwave for 10-15 seconds.
