Preparation
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, cream the softened butter and brown sugar until light and fluffy.
- Add the molasses and egg to the butter and sugar mixture; mix until combined.
- Gradually combine the dry ingredients with the wet mixture, stirring gently to form a dough.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least one hour.
Baking
- Preheat your oven to 350°F (175°C).
- On a floured surface, roll out the chilled dough to about 1/4 inch thick.
- Cut out skeleton shapes with cookie cutters and place on a baking sheet lined with parchment paper.
- Bake in the oven for 8-10 minutes, or until the edges are firm.
- Let the cookies cool completely on a wire rack before decorating.
Decoration
- Decorate the cooled cookies with royal icing and add candy eyes as desired.
Notes
These cookies can be stored in an airtight container at room temperature for up to 1 week. Roll cookie shapes and freeze for up to 3 months. Reheat in a preheated oven for 5 minutes or microwave for 10-15 seconds.
