Ingredients
  

For the filling
  • 10 oz frozen chopped spinach, thawed and squeezed dry Excess moisture can make the filling soggy.
  • 1.5 cups ricotta cheese Can be swapped for cottage cheese.
  • 1 cup shredded mozzarella cheese For topping, use additional mozzarella.
  • 0.25 cups grated parmesan cheese Helps to deepen the flavor.
  • 1 clove garlic, minced Adds flavor.
  • 0.25 tsp nutmeg Can replace with a pinch of cinnamon or allspice.
  • to taste Salt and black pepper Season to preference.
For assembly
  • 1 large egg, beaten Used for egg wash.
  • 1 cup marinara sauce, warmed For dipping.
  • 1 lb store-bought pizza dough Saves time while maintaining flavor.

Method
 

Preparation
  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine spinach, ricotta, mozzarella, parmesan, garlic, nutmeg, salt, and pepper. Mix well.
  3. Divide the pizza dough into four equal pieces and roll out each piece into a 7-inch diameter circle.
Assembly
  1. Spoon the filling onto one half of the dough circle, leaving a 1-inch border.
  2. Fold the dough over to create a half-moon shape and crimp the edges tightly to seal.
  3. Cut a small ghost-shaped vent or simple round hole on top of the calzone to allow steam to escape.
Baking
  1. Brush the calzones with the beaten egg and sprinkle extra mozzarella on top.
  2. Bake for 20 to 22 minutes, or until they are deep golden brown.
  3. Let rest for 5 minutes before serving with warm marinara sauce.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in a 375°F oven for 10-12 minutes.
