  • 24 pieces large button mushrooms, stems removed Choose firm, unblemished mushrooms.
  • 8 oz cream cheese, softened Can substitute with Neufchâtel or dairy-free cream cheese.
  • 1/4 cup Parmesan, grated Can substitute with pecorino cheese or nutritional yeast.
  • 2 cloves garlic, minced Substitute with garlic powder in a pinch.
  • 1/4 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 1 cup black olive slices Used for pupil decoration.
  • 8 pieces mozzarella balls Used for eyes on the mushrooms.
  • as needed red food coloring or ketchup For mimicking veins.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the softened cream cheese, grated Parmesan, minced garlic, and breadcrumbs until well mixed.
  3. Gently remove the stems from the button mushrooms, pat them dry if needed, and line them cavity side up on a baking sheet.
  4. Fill each mushroom cap generously with the cream cheese mixture, ensuring they are filled well but not overflowing.
  5. Place a mozzarella ball on top of each filled mushroom, then press a black olive slice into the center of each for the pupil.
  6. Dip a toothpick in red food coloring or ketchup and gently create thin veins on the mozzarella balls.
Baking
  1. Bake in the preheated oven for 15-18 minutes, until the mushrooms are tender and the filling is warm and bubbly.
  2. Serve warm and enjoy!

Notes

Mushrooms should be firm and fresh. Store leftovers in an airtight container up to 3 days, or freeze for up to 2 months.
