Ingredients

Pork and Seasoning
  • 1 piece boneless pork loin roast (3 to 4 lb) Choose a firm, pink, and evenly shaped roast.
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried rosemary, crushed
  • 1/4 tsp ground sage
  • Salt and black pepper, to taste
Stuffing Ingredients
  • 1/2 cup chicken broth, for the pan (plus more as needed)
  • 4 slices bacon, uncooked
  • 1/2 tsp poultry seasoning
  • 1 medium onion, divided (half diced, half thinly sliced)
  • 2 ribs celery, chopped
  • 4 slices white bread, cubed and dried
  • 1/3 cup dried cranberries
  • 2/3 cup chicken broth, divided
  • Salt and black pepper, to taste
  • Kitchen twine For tying the roast.

Method

Preparation
  1. Preheat the oven to 325°F.
  2. Dice half of the onion into 1/2-inch pieces and slice the other half thinly for the roasting pan.
Cooking the Bacon
  1. Fry the bacon in a large skillet until crisp, then move it to a plate and keep the bacon grease in the pan.
  2. Add poultry seasoning, diced onion, and celery to the pan. Cook for about 8 minutes, stirring, until tender but not browned.
Preparing the Pork
  1. Butterfly the pork loin lengthwise but do not cut all the way through. Open it like a book and pound it to about 3/4 inch thick.
  2. Mix the cooked vegetables with the bread cubes, add broth gradually until just moist, crumble in bacon, add cranberries, and season with salt and pepper. Let cool before using.
Stuffing and Cooking
  1. Spread the stuffing over the pork, roll it up jelly-roll style, and tie with kitchen twine every 1.5 inches.
  2. Rub the outside of the roast with olive oil and season with garlic powder, sage, rosemary, salt, and black pepper.
  3. Place the rolled pork seam-side down in a roasting pan, scatter the sliced onion around, pour in chicken broth until it is about 1/2 inch deep. Roast for 90 to 110 minutes until a thermometer reads 140°F in the center.
Serving
  1. Let the roast rest for 15 minutes before slicing. Remove twine and slice into rounds, spooning pan juices over the top before serving.

Notes

Let the stuffing cool before adding it to the pork. Roast should not be overcooked to prevent drying out. Use a thermometer to ensure accurate cooking.
