Ingredients

Main Ingredients
  • 10 strips bacon Fry until crisp
  • 1 lb fresh broccoli, cut into small florets Look for deep green, tight florets
  • 1 cup golden raisins For sweetness
  • 1 to 2 cups shredded sharp cheddar cheese For a sharp, creamy bite
  • 1 cup chopped walnuts For extra texture
Dressing
  • 6 tbsp garlic-flavored rice wine vinegar Can substitute with plain rice vinegar
  • 1 clove garlic, minced Use 2 if small
  • 1/4 cup granulated sugar For sweetness
  • 1 cup mayonnaise Not Miracle Whip
  • 1 cup plain Greek yogurt For creaminess

Method

Preparation
  1. Fry the bacon in a large skillet over medium-high heat for 8 to 10 minutes, or until crisp. Drain on paper towels, pat dry, and crumble into small pieces. Let it cool a bit.
  2. Cut the broccoli into small bite-size florets and place them in a large bowl.
  3. Add the raisins, walnuts, crumbled bacon, and cheddar to the broccoli, keeping them layered.
  4. In a small bowl, whisk the vinegar, garlic, sugar, mayonnaise, and Greek yogurt until smooth.
  5. Pour the dressing over the salad and toss until everything is coated.
Chilling
  1. Cover the bowl and refrigerate for at least 2 hours, or overnight for better flavor blending.
Serving
  1. Stir the salad once before serving, then serve it cold.

Notes

For the best texture, keep broccoli florets small and even. Store in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended.
