Ingredients
  

For the marinade
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon red pepper flakes adds heat
  • to taste salt and pepper
Main ingredients
  • 4 chicken breasts fresh and plump for best results
  • green onions for garnish

Method
 

Preparation
  1. In a mixing bowl, combine the soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, and red pepper flakes. Stir until the sugar is dissolved.
  2. Place the chicken breasts into a resealable bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is coated. Seal the bag or cover the dish and refrigerate for at least 1 hour.
Cooking
  1. Preheat your grill to medium-high heat.
  2. Remove chicken from the marinade and discard the leftover marinade. Season both sides of the chicken with salt and pepper.
  3. Place the chicken on the grill and cook for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
Serving
  1. Remove the chicken from the grill and let it rest for a few minutes before serving.
  2. Garnish with chopped green onions before serving.

Notes

Avoid over-marinating the chicken, and preheat the grill for best results. Use a meat thermometer to ensure it's fully cooked. Discard the marinade after use to prevent cross-contamination.
