  • 2 large eggs
  • 0.25 cups fresh orange juice
  • 1 tablespoon orange zest

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the butter until creamy. Add in the eggs, orange juice, zest, and vanilla. Mix until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Gently fold in the cranberries.
  6. Pour the batter into the greased loaf pan and smooth out the top.
Baking
  1. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cooling
  1. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

For best results, avoid overmixing the batter and check for doneness with a toothpick. This loaf can be stored in an airtight container for up to 5 days or frozen for up to 3 months.
