  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
Wet Ingredients
  • 1 cup milk Can substitute with buttermilk or almond milk.
  • 2 large eggs Can substitute with flax eggs or applesauce for a vegan version.
  • 1/4 cup melted butter Can substitute with coconut oil for a dairy-free option.
  • 1/4 cup honey Can substitute with agave syrup or molasses.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and place your cast iron skillet in the oven to heat up.
  2. In a mixing bowl, combine cornmeal, all-purpose flour, baking powder, salt, and sugar. Stir these ingredients together until well mixed.
  3. In another bowl, whisk together the milk, eggs, melted butter, and honey until smooth.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined.
  5. Carefully remove the hot skillet from the oven, add a small amount of butter, and let it melt. Pour your batter into the skillet, spreading it evenly.
Baking
  1. Return the skillet to the oven and bake for 20-25 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
Serving
  1. Let the cornbread cool for a few minutes before serving. Optionally, drizzle additional honey over the top for added sweetness.

Notes

Be careful not to overmix the batter as this can lead to tough cornbread. Also, check the baking time closely to avoid drying it out.
