  • 1 small sweet onion You can substitute with a small amount of yellow onion or a shallot.
  • 1/3 cup neutral oil (avocado or canola) Olive oil can be used but may taste heavier.
  • 3 tablespoons apple cider vinegar Can be swapped with white wine vinegar or rice vinegar.
  • 2 tablespoons mayonnaise Can be substituted with Greek yogurt or more oil for a non-dairy option.
  • 1-2 tablespoons honey Adjust to taste; maple syrup can also be used.
  • 1 teaspoon Dijon mustard Yellow mustard can be used, but use less.
  • 1/2 teaspoon salt
  • to taste dash black pepper
  • 2-4 tablespoons water Thins the dressing; add as needed.

Method
 

Preparation
  1. Chop your sweet onion into chunks so it blends easily.
  2. Add the onion, oil, vinegar, mayonnaise, honey, salt, and pepper to your blender.
  3. Blend until smooth and lightly creamy. Taste it right away.
  4. Adjust to your taste - add more honey for sweetness, more vinegar for tanginess, or more salt if needed.
  5. Pour into a jar and chill for at least 30 minutes to allow flavors to meld.

Notes

Chill before tasting to mellow the onion flavor. This dressing keeps well for about 5 to 7 days in the fridge. You can also adjust the sweetness and tang to your preference by playing with the honey and vinegar amounts.
