Ingredients

Oat-Pecan Crust
  • 2/3 cup whole pecans
  • 1/3 cup large-flake oats
  • 1/3 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup butter, melted
Cheesecake Filling
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 cup cooked, cooled sweet potato (about 1 medium)
  • 1 1/2 pounds cream cheese, at room temperature
  • 1 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
Brown Sugar Whipped Cream
  • 2 cups cold heavy whipping cream
  • 2 tablespoons packed brown sugar
  • 1 teaspoon vanilla extract
  • Ground cinnamon, for dusting

Method

Make the Crust
  1. Heat the oven to 350°F. Pulse the pecans, oats, brown sugar, flour, cinnamon, and salt in a food processor until you have coarse crumbs. Then add the melted butter and pulse again until the mixture starts to clump together. Press the crumbs firmly into the bottom and about 1 inch up the sides of a 9-inch springform pan.
Bake the Crust
  1. Bake the crust for 12 minutes, then set it on a rack to cool.
Blend the Filling
  1. Place all the filling ingredients in a blender and blend until completely smooth. Stop as needed to scrape down the sides so everything mixes evenly.
Set Up the Water Bath
  1. Boil 2 quarts of water. Wrap the outside of the springform pan in foil to help prevent leaks, then place it in a large baking dish. Pour the filling into the crust, and then pour the boiling water into the outer dish until it comes about 1 inch up the side of the pan.
Bake Until Just Set
  1. Bake for 50 to 60 minutes, or until the edges are firm and the center is just set.
Chill, Finish, and Serve
  1. Refrigerate the cheesecake for about 4 hours, or until it is fully chilled. Then run a thin knife around the edge and remove the pan sides. Just before serving, whip the heavy cream, brown sugar, and vanilla to soft peaks. Spread the whipped cream over the top and dust with cinnamon.

Notes

Store the cheesecake covered in the refrigerator for up to 4 days. Wrap slices or the whole cheesecake tightly and freeze for up to 2 months. Serve with coffee, chai, or berries for contrast.
