  • 2 cups diced apples Use a mixture of tart and sweet apples for best flavor.
  • 1/2 cup sugar Can be substituted with caramel sauce or maple syrup.
  • 1 tsp cinnamon Essential for flavor.
  • 1/4 tsp nutmeg Use freshly grated for better flavor.
  • 1 tbsp lemon juice Can be replaced with orange juice.
For the pie crust
  • 1 package pie crusts Store-bought or homemade.
  • 1 egg beaten with 1 tbsp water (for egg wash) Gives the hand pies a golden color.
  • Candy eyes for decoration Add a fun and festive touch.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a bowl, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Mix well and let sit for 5 minutes.
  3. Roll out the pie crusts on a clean surface and cut into rectangles, about 4 inches by 5 inches.
Assembly
  1. Place a spoonful of the apple mixture in the center of each rectangle and avoid overfilling.
  2. Fold the crust over the filling to create a pocket. Crimp the edges to seal.
  3. Brush the tops with egg wash and make small slits on top for steam to escape.
Baking
  1. Bake the hand pies on the prepared baking sheet for 20-25 minutes until golden brown.
  2. Let them cool for a few minutes before decorating with candy eyes.

Notes

Store in an airtight container in the refrigerator for up to 3 days. These pies can be frozen for up to 3 months. Reheat in the oven at 350°F (175°C) for the best results.
